How to register yourself as a Household Employer: (Updated as of June 16, 2013)

Fill out the R-1 form (Click the link to download the file and fill-up and print!)

When you are given your SSS Household Employer Number, you'll need to get this R-1A form to register the helpers that are with you.  Fill in all the details like your SSS employer number, name and addresses.  You need to print two copies of this (SSS will get one copy and you get to keep the 2nd copy)

UPDATE: You can ask a representative to do these things for you!
 a)  Authorization Letter (authorizing him to do the transaction for you)
 b)  Your ORIGINAL valid ID (so SSS can verify your signature, that you are the one requesting)
Make sure that you fill out all the details CORRECTLY!!  Because if you make a mistake, then you will personally need to appear at SSS to verify the details! Hassle diba?  But oh, well!  At least..

How to get an SSS number for your helpers:

Get an E-1 form and fill it up.

You will need a photocopy of your helper's birth certificate or baptismal certificate.

In the event that your helper has NEITHER (birth certificate or baptismal certificate), you can still fill up this E-1 form and they will still be issued an SSS number.

You will use the SSS numbers when you make the quarterly reports.

The only difference with submitting & not submitting the birth certificate or baptismal certificate is the availment of the benefits.  To receive all the benefits - your helper MUST submit any one of them.  These benefits will be put on hold and cannot be used UNTIL any one of the documents is submitted.

Here's the Schedule of Contribution:

How do you discipline a child?

Monday, June 17, 2013

How do you discipline a child?  Is there a formula to follow?  Or a guideline perhaps on what to do and how to do it?  Is there a class or a seminar?  Or do you just wing it?

You see, Kailee is starting to get naughty.  She has times when she tests our limits.  She would consciously do something and then wait for our reaction.

For the past two weeks we've had four (4) incidents of Kailee biting Connor.  She would play with him, make him laugh, kiss his cheeks and hug him.  Then suddenly, I hear Connor cry in pain and his cry is inconsolable.  Kailee would tell us 'Connor is crying..' with a sad face.  We then take a look at Connor to check on him, only then will we discover that she bit him.  How did we know she bit Connor?  There were deep bite marks on Connor's little fingers.  I'm sure it was painful.

I then talk to Kailee, I tell her that it's not nice to bite Connor.  I then ask her 'You want mommy to bite your finger too?'  To which she will reply 'Yes' and then when I ask it again she'll say 'No'.  So I thought she understood (well, I think she really does) but after a few days - it happens again.  I don't know what to do anymore.  I've raised my voice a couple of time and she seems to 'get' the point.  I would like to spank her (I'm sure a LOT of eyebrows will raise) - but I feel that she might be too young.  I've tried to give her a time-out but since she's a very active child - it lasts only for a few seconds.

HELP!  What can I do, to get my point across to her.

Is this just a phase?  Or do I have a little Vampire?

Cooking Quest: Karaage Chicken

Wednesday, June 05, 2013

While in Tokyo, Karaage chicken was a staple in our meals, simply because Kailee loved them.  I was amazed on how she could finish off half an order.  I vowed to try and make it for her when we came home.

While searching for a recipe online - I found that, there's a Japan Karaage Association!  I am learning to love the Japanese - I find it funny in a way that they would have an association just for Karaage Chicken!  They must truly love this dish and developed it as an art, very interesting - don't you think?

It is just now, that I finally got around to make it for her.  The outcome was somewhat
the same great, but look was very different! I may really need to look for potato starch (although some recipes just call for cornstarch)

Karaage Chicken

1 kilos - Thigh fillets cut into small bite size pieces (I used the skinless)
2 Tbsp - Sake
2 Tbsp - Soy Sauce (I used Kikoman)
1-1/2 Tbsp - Grated Ginger
1-1/2 Tbsp - Grated Garlic
2 Tbsp - Granulated Sugar
Equal parts of Potato Starch and Flour
Lemon (as garnish)
Ajinimoto (optional)

Add Garlic, Sake, Soy Sauce, Ginger and Sugar together.
Add the chicken pieces
Put in a ziplock plastic or container and seal with Saran wrap
Marinate for at least 4 hours (I did mine overnight)
Before frying - add equal parts potato starch and flour, add some salt and pepper too!
Coat the chicken pieces.
Heat oil
When the oil is hot - add the chicken pieces one by one.
Put the flame to medium and continue frying until chicken turns light brown.
Take out the chicken and set aside.
When all chicken are cooked, heat the oil again and put to maximum flame.
Add all the chicken and cook in high heat.
When chicken turns golden in color - take them out.

Serve them with lemon.

Cooking Quest: Revisiting Iberian Chicken

Monday, June 03, 2013

I confess, I am obsessed with perfecting a recipe.  This is my third try, and wonderfully enough - I finally got it right.  I tweaked the recipe a bit and I am very happy on the outcome.  I used a whole chicken with bones intact (supermarket bought) and the flavors were just right - the right amount of saltiness and the flavor of lemongrass.

Here's my tweaked recipe:

1 pc. whole chicken (with bones intact)
2-1/2 tbsp. whole fresh peppercorn, ground
12 heads garlic, peeled and pounded (you can lessen or add depending on your taste)
1-1/2 tbsp. rock salt
10-12 pcs. Calamansi (strain to take out the seeds)
5 white stems of lemon grass
1 pc. chicken cube dissolved in 1 cup boiled water
3/4 cup extra virgin olive oil
10 pieces Baby Potatoes cut into halves (you can opt not to cut them)

1.) Mix the calamansi juice, rock salt and freshly grounded peppercorn
2)  Rub the mixture all over the chicken, make sure to rub inside the cavity!!
3.) Insert the LEMONGRASS into the cavity, together with some of the pounded GARLIC.
4.) Mix the CHICKEN CUBE/HOT WATER solution and OLIVE OIL.
5)  Place the mixture on a ziplock plastic and place chicken inside, add all the garlic seal it up and make sure you take out as much air as you can.
6)  Place in the refrigerator and marinate overnight.
7)  Place in an oven-safe dish.  Assemble the chicken with breast on top.  Pour the marinade all over the chicken.
5.) Preheat oven to 350F. Before baking, put baby POTATOES in the platter. Cover with aluminum foil and bake for 2 hours until tender.
